Anyone can claim their Olive Oil is of high quality or Extra Virgin. The only Standard for being Extra Virgin is the voluntary standard of the California Olive Oil Council. We are members and for the past 4 years we have submitted our olive oil to the COOC for chemical and taste tests and each year we have been certified Extra Virgin and allowed to display the COOC Extra Virgin Seal.
