Terra Bella Vista Tuscan Estate Extra Virgin Olive Oil has a wonderful fruity taste with a slightly peppery aftertaste. We recommend it for dipping, salads and to put on dishes just before they are served.Dipping We suggest using fresh baquettes of French bread for dipping. The lack of any strong taste in the French bread allows you to really taste the Olive Oil.

Salads Our Olive Oil is really good by itself on all green salads and with a tomato and mozzarella salad. Also, note the Ceasar Salad recipe that follows.

Spritzing We like to put our Olive Oil on a number of dishes just before serving such as: green beans, baked broccoli and cauliflower, sauted prawns and baked salmon to mention just a few.

Baked Vegetables Put fresh vegetables on a cookie sheet (including asparagus, green beans, broccoli or cauliflower). Salt and pepper and put fresh Terra Bella Vista Olive Oil on them and bake for 15 – 20 minutes at 350 degrees. This makes a wonderful vegetable dish.

Fresh Tomatoes Slice fresh tomatoes and fresh mozzarella add fresh basil leaves and drench in Terra Bella Vista Olive Oil. This is a great summer dish.

Doug’s Caesar Salad Recipe

(Adapted from the New York Times Cookbook)

salt

3 cloves garlic, peeled 3 bunches romaine

3 teaspoons dry mustard (Colemans) 3 tablespoons grated

parmesan cheese

3 tablespoons lemon juice

Tabasco to taste 1 raw egg

9 tablespoons olive oil 1 cup croûtons

(use very good olive oil preferably

1. Sprinkle the bottom of a wooden salad bowl with salt and rub it with the garlic (remove excess salt and return garlic finely chopped). Add the mustard, lemon juice and Tabasco and stir with a wooden spoon until the salt dissolves.

2. Add the olive oil and stir rapidly until the liquid blends.

3. Wash the romaine well and dry the leaves with paper towels. Tear the leaves into bite-sized pieces and add them to the salad bowl. Sprinkle with Parmesan and break the egg over the salad.

4. Sprinkle with croûtons and mix gently but thoroughly
